300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (produces 850ml, enough for 10)

A few cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Place the listed items into a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, take off the burner and leave to cool fully. Pour to a sealable bottle, cap it and store chilled, it will last for up to one month.
To make Premix: Mix the specified liquids into a large bottle, let it rest for 60 minutes, then strain , ideally through cheesecloth, so it's completely strained.
To serve: Pour 85ml of the premix into your stirring glass filled with ice, and agitate lightly for one minute until cold. Pour into a frosted cocktail glass or similar, top with a few cranberries adding the final touch by giving it a brief mist with the mandarin essence over the drink.
